Eggless Black Forest Cake










Black Forest cake consists of several layers of chocolate cake, with whipped cream and cherries between each layer. Then the cake is decorated with additional whipped cream, cherries, and chocolate shavings.This makes it more yummy!!!





Method 

Cake Mix

maida-1cup
cocoa powder-3tsp
butter-  4tbsp /50  gm
condense milk -1/2 cup
baking powder-1/2tsp
baking soda-1/2 tsp
coco cola-100 ml 

Take a bowl and add melted butter and condense milk..beat well.

Mix maida,cocoa powder,baking powder and baking soda together and sieve well.
Add this mix to the condense milk-butter mixture alternating with cola till maida and cola are finished.(u can stop adding coca cola when it reaches a right consistency)

To Bake


Preheat oven to 350 F.
Grease a baking tray with little butter and dust it with Maida .
Pour the cake mix  into this greased baking tin and bake for 30-40 minutes or till a toothpick inserted comes out clean.
When it is done, let it cool and then slit it horizontally into two.


Ingredients –For the Sugar syrup

Sugar – ½ cup
Water – ½ cup

In a thick bottom pan,mix the sugar and water and boil till the sugar melts.Keep aside to cool.

Ingredients –For the cream 

Fresh cream – 300 ml
Powdered sugar – 4-5 tablespoons
Vanilla essence – 1 teaspoon


Keep cream and the beater blades in the freezer for about half an hour.
Add sugar and essence to the chilled cream.
Beat well till the cream is thick and forms soft peaks.
Keep refrigerated till use.


For assembling the cake

Cut the cake into 2-3 layers horizontally.
Keep one layer of the cake on the serving plate.
Sprinkle 3-4 tablespoons of sugar syrup on it.
Now spread 2-3 tablespoons of whipped cream on top of the cake.
Add the chopped cherries on top.
Repeat with other layers.
Cover the cake completely with whipped cream on all sides and the top.
Level the top and sides with a broad spatula dipped in chilled water.
Decorate the top with chocolate shavings,halved cherries
Keep chilled in the fridge till use

Quick macaroni


Ingredients

Macaroni  -2 cup
Big onion-1
Capsicum-1
Tomato-1
Coriander powder-1 tbsp
Chilly powder-1 tbsp
Garam masala -1 cup
Cashew nut paste-2 tbsp
Salt-1-2 tsp
Chopped coriander leaves -1 tbsp


method


Boil macaroni in water . Meanwhile, brown the onions on medium heat,add  capsicum and tomato .Now add coriander powder ,chilly powder,garam masala and salt.
Add macaroni after draining water from it.mix well .Add cashew paste to it.Don't allow it to cook long .garnish with coriander leaves and serve hot.

Biryani with biryani masala mix

Ingredients

 Big onion-2
Green chilly-2
Basmati rice-1 kg
vegetables(carrot,cauliflower,peas,beans,potato)-1 each
curd-1/2 cup
Biryani masala mix-2tbsp
ghee-3 tbsp
water-4 ltr
salt- To taste
chopped coriander leaves-3 tsp
cashewnut-100 g
raisins-100 g


Method


  • Heat 1tbsp ghee in a pressure cooker.
  • Add onion and sort it till the color changes to light brown
  • Add  cutted vegetables
  • Now add biryani masala mix with curd and stir well.
  • pour the curd mix to the cooker and stir with vegetable.
  • Add washed rice to it and pour water.Add needed salt
  • cook it with  very slow fire for upto 20 min 
  • when it gets cooked ,stir everything once
  • Sort onions in ghee till it turns brown and sprinkle it on the biryani.
  • now roast cashew nut,raisins in ghee and add it to the biryani
  • spread coriander leaves over it..
  • The yummy biryani is now ready..

Side dish for chappati and rotti

Vegetable kurma


Ingredients


Onion-1big
Garlic -2cloves

Ginger-1piece
Poppyseeds-1tsp
Cashewnuts-2tbsp
Fresh grated coconut-1cup
Coriander powder-2tsp
Chilli powder-2tsp

garam masala -1tbsp
Carrot-100gms
Green peas-100gms
Beans-100gms
Ghee-2tsp



Method


Take a pan and fry onion ,garlic,ginger ,coconut,cashewnut, popy seeds,coriander powder ,chillipowder to brown.Grind these mixture and keep aside.Now cut and cook all the vegetables .Add 1 tsp chilli powder and garam masala to it.when this gets cooked,add the fried paste and cook for 2minute.


pour  some ghee on it and garnish with  leaves.


enjoy  vegetable kurma with rotti or chappati :)  
























Rajma Masala


Ingredients

 Big Onion Sliced-1
 Rajma- 2 cups

1 tomato pureed
 Whole Garam Masala - 4 Cloves
 Black Peppercorns-4
 Cardamom-2
 Bay leaf-1
 1 inch cinnamon stick-1
 Coriander powder-1/2 tsp
 Cumin Power-1 tsp

  Red Chilly powder-1 tsp
  Oil -5 tsp
 Cumin Seeds-1 tsp
 Ginger Garlic Paste-1 tsp
 Garam masala powder-1/2 tsp
 Amchur Powder-1/2 tsp
 Salt to taste


Method

For Rajma - Wash rajma 2 to 3 times and soak in water overnight. Cook it in pressure cooker until 4 whistles.

1) Heat pan on a medium high, add 2 tsp oil and sliced onion, saute onion till it gets light brown color. Take off the heat, let it get cool down, then grind to form a smooth paste.
2) Heat 3 tsp oil in a pan, add cumin seeds and whole garam masala, wait till it gets sputter.
3) Add onion puree and cook for 2 mts. Then add ginger garlic paste and saute for a minute.
4) Add tomato puree, cover and cook for 2 mts.
5) Add dry spices, coriander powder, cumin powder, amchur powder, red chilli powder and cook till oil starts loosing out from the spices.
6) Add garam masala and mix.
7) Add boiled Rajma, mix and add leftover water from boiled rajma.
8) Sprinkle some salt, mix, cover and cook for 10 mts.
9) Serve with boiled rice or roti!

Vermicelli Vada

Ingredients

vermicelli-1 cup
All purpose flour(Maida) - 3 to 4 tbsp
onion-1 big
greenchilli-1
ginger (chopped)-1 tsp
red chilli powder-1 tbsp
coriander powder-1/2  tbsp
garam masala -1/2 tbsp
salt to taste
curry leave chopped -1 tbsp
coriander leaves chopped-1 tbsp
cashew nut(optional)-1 tbsp
oil -for deep frying

Method

Boil some water and cook vermicelli .Drain it and pour cold water on it. vermicelli will become  unsticky now.drain it.take vermicelli in a bowl  add ginger  ,greenchilli,coriander powder,garam masala,red chilli powder,salt ,cashew nut,coriander leaves,curry leaves.mix well .add required all purpose flour and mix it .make small balls out of it and press in your palm to flatten it and and deep fry in oil.serve hot..enjoy :)
  



Bread Vada

Ingredients

Bread -6
Oil-for deep frying


big onion(chopped)-1
cumin-1 tsp
ginger(chopped)-1
curd-1 cup
Coriander leaves chopped-2 tsp
Green Chilly(chopped)-2
Cashewnut-1/2 cup
salt-1/2 tsp


Method

Cut Bread into small pieces.  Take a bowl andmix bread with cumin, ginger ,greenchilli,onion and coriander leaves .pour curd to this mix.Then add cashewnut paste and salt to it.mix well .Make small balls out of it and press in your palm to flatten it and and deep fry in oil.enjoy...

Sweets

Carrot Halwa





Ingredients


carrot -5 cups
condense milk-1/2 cup
milk -1 cup
ghee-3 tbsp
fried cashew nut -2 tsp
fried dry grapes-2 tsp
cardamom powder-1/2 tsp

Method

Grate the carrots and boil till it get half cooked.Now take a bottom thickened vessel and add 2 tbsp ghee and   1 tsp of  fried cashew nut and dry grapes in it.Now add carrots and pour the milk.stir it occasionally .Once it start thickening add condense milk and cook till it become dry.Now  add 1 tbsp ghee and 1/2 tsp of cardamom.Garnish  halwa with rest of the fried nuts and dry grapes.Now enjoy the yummy dessert !!!

Rava Laddu

Ingredients

1/2 Cup Rava /Sooji /Semolina
1/3 cup water
1/2 cup sugar
1/2 tsp Cardamom powder
1 tbsp Cashew nuts
1 tsp ghee


Method


Take sooji in pan, add 1tbsp of ghee and dry roast over medium heat for 5 mts.
Remove roasted sooji in separate dish.
In the same pan add water, sugar  and bring to boil over medium heat.
Add roasted sooji, mix well, cover and keep for 2 to 3 hours until syrup is soaked well with sooji.
Add cardamom powder and cashew nuts. Start to make ladoo balls.
Garnish with raisins. 






Milk Cake

Ingredients

Milk-6 cup
Lemon juice-3tbsp
Sugar-1/2 cup
Crushed cardamom-1/2  tsp
ghee or unsalted butter-2 tbsp
Cashew nut-1 tbsp

Method

In a large saucepan bring the milk to a boil over medium high heat. And let it boil for 2-3 minutes.
Add lemon juice to the milk, it will begin to curdle. Use minimum amount of lemon juice to just start the curdling process and prevent the whey (milky water) from completely separating immediately.
Boil for 5 minutes and remove approx. 1 ½ cups of the whey. This will help reduce the tartness from the cake.
Continue to cook and stir occasionally until the milk is a grainy consistency .This will take an additional 15-20 minutes.
Add sugar and cardamom and keep stirring until the mixture starts coming together. This should take approximately 5 minutes.
Lower the heat to medium and cook for another 4-5 minutes until mixture changes to a slightly golden brown color.
Transfer mixture to the greased plate and press firmly into a square shape. As an option, sprinkle sliced cashew nuts on top.
Let sit for at least an hour before slicing into individual pieces.
